Located on the Brisbane River at the iconic Howard Smith Wharves, Ciao is a vibrant 200-seat restaurant celebrating modern Italian cuisine. We pride ourselves on crafting fresh pasta in-house, cooking premium produce over an ironbark charcoal grill, and creating memorable dining experiences with seasonal Australian ingredients.

We're looking for a passionate and experienced Sous Chef to join our leadership team. If you have a love for Italian cuisine, thrive in a fast-paced kitchen, and are ready to take the next step in your career, this is an opportunity you won't want to miss.

Working closely with our Executive Chef, you'll help lead the kitchen team, ensuring every service is executed to the highest standard. You'll be a hands-on leader who inspires your team, drives consistency, and plays a key role in the ongoing success of the venue.

Key responsibilities include:

• Leading the kitchen during service and supporting day-to-day operations.
• Coaching, mentoring and developing junior chefs.
• Assisting with rostering, labour management and kitchen organisation.
• Contributing to menu development and seasonal specials.
• Managing food costings, stock control and minimising waste.
• Ensuring exceptional food quality, presentation and consistency.
• Maintaining food safety, WHS and kitchen compliance standards.
• Creating a positive, high-performing kitchen culture.

What we are looking for:

• Previous experience as a Sous Chef in a high-volume kitchen
• Strong experience in Italian cuisine
• Hands-on experience producing fresh pasta, including extruded and filled pasta
• Experience working a charcoal grill section
• Excellent leadership and communication skills
• A passion for developing people and maintaining high culinary standards
• A calm, organised approach in a fast-paced environment
