Pizza Chef

Felons Brewing Co. is seeking a passionate and talented Commis Chef – Pizza to join our culinary team at Howard Smith Wharves. Home to our iconic riverside beer garden and buzzing waterfront atmosphere, Felons is known for delivering exceptional food, great beer, and memorable guest experiences.

We’re looking for a chef who thrives in a fast-paced environment, takes pride in producing consistently high-quality pizzas, and brings energy, teamwork, and professionalism to every service.

Key responsibilities include:

• Preparing and cooking high-quality pizzas in line with recipe and presentation standards
• Assisting with dough preparation, mise en place, and ingredient preparation for service
• Maintaining consistency, portion control, and food quality standards during busy periods
• Supporting stock rotation and kitchen organisation in line with FIFO procedures
• Maintaining a clean and organised section in accordance with food safety and HACCP standards
• Working closely with the wider kitchen team to deliver smooth and efficient service

What we are looking for:

• Certificate III in Commercial Cookery or equivalent trade qualification
• Previous experience working with wood-fired, gas, or deck pizza ovens
• Food Safety Certificate and a strong understanding of kitchen hygiene practices
• Ability to perform under pressure in a high-volume kitchen environment
• Passion for quality ingredients and delivering exceptional guest experiences
• Positive attitude, strong work ethic, and team-focused approach
• Availability to work a rotating roster including mornings, evenings, weekends, and public holidays as required
