Felons is currently recruiting for a Sous Chef – Pizza to join a team that values quality, sustainability and collaboration. We’re after a true pizza specialist who thrives in a busy service and owns everything from dough to pass.

Key Responsibilities include:

• Lead the pizza section through service, from dough production and prep to stretching, topping and oven management
• Assist the Head Chef with menu planning, recipe development and pricing
• Lead, train and mentor junior pizza chefs, and step into the Head Pizza Chef role when required
• Manage stock, ordering, cost control and rostering in line with service needs and budget
• Ensure the highest standards of food safety, hygiene, HACCP and WHS are always maintained

About you:

• Solid experience in a busy, high-volume pizzeria
• Confident across every pizza task: dough, prep, stretching, topping and oven
• Able to handle a slammed service while keeping quality and consistency on point
• Certificate III in Commercial Cookery, with experience leading and training junior team members
• Flexibility and availability to work across a rotating roster
